This Fresh Melon Mimosa is just what your brunch has been missing!
Who doesn’t love fresh melons? Well, me, for one. No really… if you had asked me prior to tasting this delicious little number I would have told you flat out- No. I don’t like watermelon.
So, basically what I’m saying is that this drink has literally changed my life. Ok maybe that’s a little dramatic, but seriously… now I LOVE watermelon! I think before it was a texture thing. But blended up with a little Rosé, what’s not to love?? I guess I’d probably like just about anything once it’s mixed with a little alcohol.
With only 3 ingredients, this Fresh Melon Mimosa will be your new favorite go-to beverage for summer!
Here’s what you’ll need to make your own:
- Melons (about 1 cup)

Rosé- any champagne will do, but pink champagne tends to be a little bit sweeter.

Simple syrup OR lemon juice (2 oz.)
The first step is to blend your melons. (Ok. Am I the only one who giggles every single time I say melons?!) I used honeydew and watermelon, but cantaloupe would be yummy, too.
You’ll want to throw your melons in the blender. This is where you can switch it up depending on your personal preference… you can either blend your melons with simple syrup to keep it sweet or blend it with the juice from one lemon. The lemon juice will give it a little more zing, so it’s totally up to you.
Once your melons are blended really well, pour the mixture into some champagne flutes filling it about 1/4 of the way. Fill the rest of the glass with champagne of your choice.
Finish it off with a melon wedge garnish and start sipping! It’s really that simple!
This would be the perfect beverage for Mother’s Day brunch! If you’re not a drinker, simply replace the champagne with some sweetened sparkling water or sprite and it’s still so good!
