This Pineapple Moscow Mule cocktail is my new favorite cocktail! To be honest, I was on the fence about Moscow Mules until I tried this one and now I’m hooked.
My friend Kati from a Houseful of Handmade shared this recipe with me at SNAP conference a few weeks ago. SNAP conference is a blogging conference in Salt Lake City. It’s so fun to meet up with all my blogging friends from all over the country… and of course, there’s never a shortage of cocktails!
I’m not exaggerating when I say this, Kati is probably the most talented DIYer, EVER! She’s in the middle of a kitchen renovation right now and guys… she built her own kitchen cabinets! Like with her bare hands!!
Okay, back to the cocktail- this drink is the perfect blend of spice from the ginger beer and sweet from the pineapple juice. Add in a little fresh lime and it’s just SO good!

Here’s what you’ll need to make your own:
- Vodka (I used Salt City. It’s one of the smoothest I’ve had but it is a local distillery so it might not be available everywhere.)
- Pineapple juice
- Ginger Beer
- Lime
- Ice
First, start by adding some ice to your cup. Moscow Mules are generally served in copper mugs, so that’s exactly what I did… but truth be told, it’s all for show. They taste just as good in any old cup or glass!
Next, of your favorite vodka and pineapple juice to your cup. I’ve used Dole pineapple juice from the can as well as some fancier cold pressed pineapple juice. They’re both really good, but the cold pressed pineapple juice is hands down the better of the two.
Squeeze in the juice from half of a small lime. I like a lot of lime but you can definitely add less or more depending our your personal preference.
To finish it off, fill your cup the rest of the way with some ginger beer. I personally love this Kroger brand that I used, but there are tons of different kinds. I’ve heard Cock and Bull is especially delicious but I haven’t tried it for myself yet. The Kroger brand is like half the price, and well… I’m cheap!
