You know what’s even even better than taco Tuesday?!?! Carne Asada Tacos with Pineapple Tuesday! This nice flare to your tacos will be one of the best decisions you have ever made. Grilled carne asada= delicious, grilled pineapple= also delicious, so why not push the limits and put them together?
While a lot of these ingredients can be substituted, here is the list of my favorite ingredients for making carne asada tacos with pineapple:
- Marinated carne asadas
- Small flour tortillas
- Pico de gallo
- Green chile salsa
- Queso Fresco
- Fresh Avocado
- Cilantro
- And of course pineapple (either fresh or pre-cut into rings)
You’re going to start by cutting your pineapple into rings, if that’s not already done. Next, cut your avocados into thin slices, and dice up your cilantro how ever you like it.
Heat ½ of your grill to medium and the other half to high. Throw your carne asada on the medium heat side your pineapple on the side with high heat. Watch the pineapple close, once they have golden grill marks on each side they’re done!

Once your pineapple is cooked, remove it from the grill, turn the heat down on and cook more meat. Cooking all the way to well done will make it pretty tough to chew FYI. I prefer mine cooked about medium. Once your meat is cooked to your liking, you can then dice your pineapple and shred your meat.
To shred your meat, either rip it apart with clean hands or cut it with meat scissors. You can heat your tortillas up on the stove or grill. Whichever you prefer.
NOW THE SECOND TO BEST PART- Build your tacos! I wouldn’t recommend just making one! I use this very specific, borderline scientific routine; tortilla, meat, cheese, green chile salsa, pineapple, Pico de gallo, avocado, and finally cilantro!
I love making my first one full and then the next few a little lighter, then as you eat whatever decides to fall out is the perfect addition to the next one coming your way!
